Last fall, we wrote an article on making your own convenience foods. The response was enthusiastic and readers asked for more recipes. Here they are!

Remember, when preparing mixes, make several batches at once. Itís as easy to make six mixes as it is to make one. Label your mixes well, and be sure to include cooking instructions.

Very Veggie Spaghetti Sauce Mix

Mix together ingredients and store in a tightly sealed container.

To use, place mix in a saucepan, add 3 cups of water and simmer until vegetables have softened. Or add contents and 1 pound, browned ground beef, add water and simmer until done. Serve over pasta or use as a pizza sauce.

Vegetable Soup Starter

Mix together ingredients and store in a tightly sealed container.

To use, add contents to 1 quart of boiling water. Cover and simmer on low heat for 30 minutes or until veggies are tender. Five minutes before serving, add the desired spices - pinch of basil, a dash of tarragon, salt and pepper to taste, etc.
