TOMATOES IN OIL AND VINEGAR

D. Euler from Kalamazoo, Michigan wrote us: "Small roma tomatoes cut in half and dried are excellent throughout the winter when re-hydrated in oil and vinegar. They are great in pasta and salads."

We tried this with some tomato slices we had and found it to be delicious. We also added a little garlic and onion. Blend the rehydrated mixture and you have tasty salad dressing. (Note: we thinned the oil and vinegar with about 1/4 cup water.)
